ok here's my take
first release (single disc) - if you want the copy cheap (around $9.99 average for r1, 299 for the r3 with the disgusting black case dvd5, 375 for the clear copy dvd9 i think)
deluxe edition 3-disc - if you want a whopping supplement for the film i.e. making, featurettes etc. and a cooler packaging imagine 3 discs 1 film feature 2 disc supplements. imo, the real documentaries "the true story of black hawk down" and pbb (not to be mistaken for that p*noy big brother production) ambush in mogadishu" is a good supplement in this film to understand what really happened.
superbit edition - if you want a kicka$$ audio and video treatment. hardly noticeable but there are differences in some hi-fi gear. if it's a superbit, there's a dts if you're a sucker for that track like me!

imo again, the first transfer was already great, panning of sound is reference quality. a little grainy at times but that's how it was made by ridley scott.
and for the latest extended cut - this is the one i'm waiting for. i thought they're going to release some extended scenes on the 3 disc but i was disappointed. they included some 8 deleted scenes but not integrated to the film ala lotr ee's. i bought it for the supplements and this one's a real fav movie!
and if you're really undecided to get the last one (i hope), wait for the reviews when it comes available 6-6-6

last, we all know blu-ray and hd-dvd is around the corner so expect to shell out some more for this.
