Title: No Reservations: Anthony Bourdain in Pampanga

Episode will air in US, January of 2009, and will air in asia in 2010 (thank God for torrents!!).   Anthony Bourdain will also shoot in Manila and Cebu.

Bale Dutung is in Villa Gloria, Angeles City.   Not your typical walk-in resto.   By special arrangement only, and its P1800 per head, minimum of 10-12 persons.

Hindi ata, dina pumunta sa Everybody's (maybe becoz Bizarre Foods' Andrew Zimmern did that part already).    His itinerary includes Claude Tayag's Bale Dutung, Aling Lucing's (yes, right at the riles) and Mila's Kambingan.

Di ko rin sya na meet.  They were also trying to contain people from coming over para di maging circus......I just grabbed the pics from a friend.  ;)

anyone who knows where he will be dining in Manila? hehe

I dont know if my friend is serious or playing on me.......he'll cook daw with Juday.  :o :o :o

I'm very nervous about tonight's Philippines show.

I'm all too aware of the fact that the country is made up of over seven THOUSAND islands and that I visited exactly two of them. The food is intensely regional ... I mean, even the difference between the food in Manila and Pampanga -- only a couple of hours away --is striking. So I missed ... a lot.

I'm very aware of how many Filipino fans we have -- and how enthusiastic they are about us (finally) covering their country. I wanted very badly to do a good job on this one. But I fear there's no way we got it "right."

Not that I didn't have a great time. I did.

For one thing, I settled a karmic debt of sorts: Augusto Elefano, who'd argued so fervently for his country of ancestry on the previous season's FAN-atic special had been sent home short of the prize after a brutal interrogation at my hands. Impressed by his zeal and feeling guilty about smashing his hopes and dreams I felt that Cebu would be good to see through his eyes. So we packed him, his wife and baby daughter onto a plane -- and sent them off into TV Land.

What we did get right, I'm quite sure, was making sure that the amazing, porky delights of "sisig" got plenty of camera time. If you've never had this divine mosaic of pig parts, chopped and served sizzling and crisp on one side on a screaming hot platter, then you've yet to have one of the world's best beer drinking dishes. And speaking of pig? It can now be said that of all the whole roasted pigs I've had all over the world, the slow roasted lechon I had on Cebu was the best. This puts the standings in the Hierarchy of Pork as follows:

#1. Philippines

#2. Bali

#3. Puerto Rico

If nothing else, I hope that homesick Filipinos living abroad get a glimpse of some of the food and scenery they've no doubt been missing. And for viewers who weren't previously familiar with the wide and tasty spectrum of flavors available over there, I hope the sight of me shoving a lot of very tasty stuff into my maw provides -- if nothing else -- inspiration to look further.

Closer to home, I have a problem: My obsession with the HBO series "The Wire" is taking an unhealthy turn. I recently bought the DVD boxed set -- all 60 hours of the show -- as well as "The Corner" the previous six part mini-series by the same writer/producers. I'm rewatching them all from beginning to end and just can't stop. It's like if I watch them closely, I'll somehow figure out how writing can be so good -- how an ensemble of mostly little known actors and a mammoth, wildly ambitious progression of story arcs can make a whole city come vividly, tragically alive. It's funny, exciting, excrutiatingly sad and always, always feels real. I can't tear myself away.

Gotta go. Omar and Brother Monzon are making their move on Stringer Bell ... I love this part.


Woohoo! We can soon be known as the PORK capital of the world!  ;D

Don't know about the best but I really like Buddy's sisig. That's where I'm going later. ;D

Thinking about all the food they showed, with the exception of maybe the shrimp adobo and possibly to a lesser extent the lechon, none of it, I think, will really look appetizing to a foreigner. I don't see it making them go, "That looks great! Let's go there!" Or am I wrong in that?

Kahapon pa ako naghahanap ng sisig.....tsaka crispy Lechon skin..... ;D ;D ;D

Dito sa Angeles City, if you want tender, juicy sisig served the orig way (medyo basa), Aling Lucing's is best.   You want it crunchy, crispy, Mila's is the one you got to try.

I agree with you that Mila's sisig is one of the best (aside from Lucing's)!  We also had chicharon bulaklak and lechon kawali, lahat masarap!  :D

Coulnt agree with you more.  The ambience isnt good, but the sisig there is simply great.  Meatlovers delight.   Just bring your cholesterol pill!!  ;D

Kinda disappointing lang ung evening dinner nya sa pampanga. Who would serve adobong quale as make it look as if it was an everyday dish sa pinas. Even Anthony Bourdain knew it was too expensive to be an everyday Filipino food sana Adobong baboy at manok nalang d na pinaarte sana.

Even the sinigang was overly fancy as I recall, and the fresh salad too - they looked very delicious though..

They should have served the ff:

Daing na bangus or inihaw na bangus
Deep fried Galunggong
Pork BBQ

That's really the problem of getting a socialite-type -- they're more interested in the accoutrements and the fancy trappings, rarely the food itself. Of that Pampanga trip, the kambing and the sisig were the only things that were true to its source -- nothing fancy-shmancy about it. Food for foodies' sake. I think Bourdain's people realized that what they're seeing is really not representative of the true foodie culture here, hence, the decision to excise other segments, namely, the visit to Gene Gonzales' resto.

No Reservations' intent is to present local color. Haute Cuisine is so "normal" for those who watch the show it would be "boring" to showcase places like those snooty sandwich places or hidden steak rooms.

I hope Tony had his shots before coming over or else hello Hepa!

enjoyed the show actually. agree with the others - The Pampanga dinner is disappointing. but you have to admit - its kinda cringeworthy to be the receiving end of Tony's comment when he brought up - This is an everyday filipino dish? (parang ang dating - sigurado ka? eh ang mahal nito ah)  and claude said something along the lines na - really? its expensive? its free here eh.

hay! if only they served tony with adobong manok or something. But the episode with the sisig is classic.

sayang lang at di pinainom si Tony ng Lambanog - he does love alcoholic drinks. Puro SanMig yun pinainom sa kanya
